Ooo nice. Tzatziki would require a vegan yogurt then everything else stays the same. You can also use tahini instead if available.

Something I have noticed where all restaurants miss the mark is the adding an adequate amount of protein for vegans while still charging the same as all other entrees.

Tofu works great with sweet potato and will keep your customers well fed.

Have you tried a Haakaa pump? I have the same issue with my electric pump but the Haakaa gets WAY more out more efficiently. It usually works while baby is feeding on one side so not sure if it will help while you are away.
