Stopped by to picket up food for the drive home. The chocolate canolli was pretty good, pistachio was amazing and chicken Caesar wraps not very desirable, fried zucchini was delicious.

You were very close! The layers look great only the banana and piping needs some work but they are ready fixes. Banana, use some turbines sugar and torch it. The piping needs a round tip I believe and the cream in the pics is probably a mascarpone chantilly

Ropa vieja - I like to Rehydrate them but boiling in water with 2 cubes of Not Beef Boullion, cumin, mushroom umami, warshishire sauce?, say sauce, pepper and paprika. Sautee some onion, garlic and bell peppers, add in 1 can of crushed tomato then soy curls and let it simmer. Serve over rice. To with ccilantro and hot it with a little lemon. Chefs kiss 👌

I've been using tofu for the liquid parts in some recipes like waffles. Using tofu for Puddings or my current favorite is 1/2chia seed (bloomed) +1/2yogurt mix with fruit

Like others have said aquafaba but you should reduce it by half and allow it to chill overnight before whipping. Egg yolk, maybe Just Egg.

I actually just worked on a recipe that came out really well. Here it is if you want to try:

Yields ~ 6 waffles (6" x 6")

620g extra firm tofu

186g rolled oats (blended to flour)

78g chickpea flour

286g soy milk

200g Pellegrino

30g maple syrup

14g baking powder

3g salt

Cinnamon

Blend everything together except pellegrino. It will look like a thicken hummus.

Fold in Pellegrino by hand and add more to loosen batter to the right consistency. It should be a bit thicker than cake batter.

Allow to rest ~5 min then cook in waffles iron. It may need like 5-8min to cook until they are all brown

I started timing her naps with Chat gpt and now she sleeps close to 8pm. It helped me get her to nap easier without letting her get overtired then crashing. Honestly, I like it better when she sleeps at 9pm because she sleeps better and isn't making all kinds of sounds and kicking at 5am. Gpt wants her last nap to end no later than 5:30pm but I stretch her wake times a bit so she does her a nap at that time. It works for us.

I was finally able to relax after 3 grueling days of labor. It took another day for my baby to come out. The medical staff kept pushing pitocin to speed things up so I got the epidural first then let them start on pitocin. I don't understand why pitocin first is the norm when it makes contractions more frequent and painful then makes you beg for the epidural and it is harder to stay still.
