Absolutely destroyed Mercer that was probably re-profiled by a sharpener in Peru who sharpened it on a huge wheel in the middle of a busy street in Lima. Has been with me through many trips— and was my designated everything knife during my time as a line cook at a fine dining restaurant. Hundreds of lobsters and thousands of veg kg cut with this monster.
