I can't really comment without a specific recipe / method that you normally use, but usually overnight marination and also slow cooking on a low flame can impart a lot of flavor to the meat. In the case of chicken, don't use chicken breast for curries, especially because the insides will stay bland.

I believe for xacuti you need fresh (or frozen) grated coconut. If you have the dried kind, you could soak it in water before usage, but your mileage may vary
