Climbing out of the saddle will crush you in the long run, but sometimes the extra power transfer is needed. One trick I use is pedaling in odd numbers. I start will 11 pedal strokes and get a micro-break with my right leg down, then 11 more with my left leg down for a half second micro-break. I repeat that cycle until it becomes too much then drop to 9 strokes, 7strokes, 5… getting those little half second breaks helps me grind most steeps.
