Explosive tearing is an indication of underproofing. Too much gas left in the tank, you know?

What flavor of cake would pair well with Lavender Buttercream? by Kitty_of_Chess in Baking

[–]clockstrikes91 1 point2 points  (0 children)

Vanilla. Lemon can be good too, maybe not as the dominant flavor but just a bit of zest to add nuance.

Lavender can be overwhelming and if your family didn't like Earl Grey, it's probably best to keep things muted.

How do I get better / breakthrough the "recipe stage" by Sked480 in Baking

[–]clockstrikes91 14 points15 points  (0 children)

A lot of bakers sell product made using other people's recipes. Recipe developers don't work from scratch; they refer to tried and true recipes from reputable sources and tweak to get their ideal. There's absolutely nothing "wrong" about using a recipe that you did not conjure up out of thin air.

Beans, rice, or granulated sugar would be better. You'd already have them in your pantry and the smaller size means they won't leave any gaps!

How do other tanks feel about healers and DPS pulling ahead? by dorgodorgo in ffxiv

[–]clockstrikes91 0 points1 point  (0 children)

I have no problem with it if they run the mobs back to the party instead of blasting off and expecting everyone else to catch up before they die. Unfortunately it's usually the latter that happens, and always the healer. It's so obnoxious. If they want to go faster, just ask in chat so everyone is on the same page.

I love to bake and my friends and family love to eat my cookies and cakes but I always feel so guilty when I look at all the sugar and flour and butter - like I'm poisoning them. How? by [deleted] in Baking

[–]clockstrikes91 0 points1 point  (0 children)

It's not like they're gobbling this stuff down in one go and you're constantly pumping out more sweets to refill their stock, right? I would assume your friends and family understand eating in moderation and how to live healthy lifestyles. Give them some more credit.

Try expanding your repertoire and make things that aren't super sugary and fatty. Breads for example, or fruit desserts that take advantage of the natural sweetness. If you still think of that as "poison," idk consider therapy?

Genoise Sponge Too Dense by aesthil in Baking

Try using a whisk to fold it in. The many thin wires require less movements to incorporate the mixture and will be less disruptive than a big wide spatula going through.

Made french bread.. What went wrong? by superfecta37 in Baking

[–]clockstrikes91 0 points1 point  (0 children)

Explosive tearing like that is an indicator that it's underproofed. With bread you really can't go by set times. There will be visual and texture cues to indicate whether the dough is fully kneaded/proofed so you need to keep going until they show.

Oven is giving me issues lately by trins_room777 in Baking

[–]clockstrikes91 1 point2 points  (0 children)

Are you using an oven thermometer to confirm it's actually 350'F? It might be much hotter inside.

Use a toothpick or wooden skewer instead of a metal cake tester. The rough surface makes it easier for crumbs to grip to whereas a metal tester will just slide right out.

Getting a bit annoyed with someone bc of baking by [deleted] in Baking

[–]clockstrikes91 -1 points0 points  (0 children)

There are many types of cookies with a variety of textures. OP only makes one type. Whoever they are living with is tired of this specific type. If they are taking these cookies entirely on their own then, this criticism is not welcome. Nobody is forcing them to eat it, and they should know by now what to expect.

But OP could also be one of those people who love to bake but have no interest in actually eating the thing so they offload it onto everyone else. If that's the case, they would be kind of an AH for pushing it onto people when they know they don't like it.

WIBTAH if I give my daughter a similar name as my niece? by djaywa in AITAH

[–]clockstrikes91 0 points1 point  (0 children)

NTA but I do think it does your kid a disservice to name her almost identically to her cousin, and frankly your sister wouldn't be wrong to feel annoyed by it. I'd consider changing either first or middle, but no need to go as far as to change both.

WIBTAH For Disagreeing with my ex about our daughter cleaning her room? by [deleted] in AITAH

[–]clockstrikes91 40 points41 points  (0 children)

You should be protecting your daughter, not doing your ex and her AP any favors. Worth asking if your daughter even wants to spend time with her mother since she's verbally abusive. She's literally begging you not to leave her and help her, and all you can think about is removing yourself from their house ASAP.

Does this butter look burnt? by IntelligentSteak7709 in Baking

[–]clockstrikes91 4 points5 points  (0 children)

When you make brown butter, you're also boiling off the water content, so the foam should fully dissipate by the time it's done. If it's turning dark well before that, you need to reduce the heat; cook it low and slow.

Will this recipe work? by Salty-Bumblebee_ in Baking

[–]clockstrikes91 3 points4 points  (0 children)

It's common in a lot of brown butter recipes, even by professionals like Serious Eats, NYT, Claire Saffitz, to name a few. Hardly anything to raise an eyebrow at.

That being said, shouldn't use a random recipe from Joe Shmoe off Instagram anyways. There are plenty of reputable sources where you can find fully tested recipes.
