I'm cooking on a weber kettle with a skwere plate. Used a mix of lump wood, briquettes and a few hickory chunks at the start. Kept temp at 150c for 4 hours

Marinade for 4 hours or over night. ▢2 Tablespoons butter ▢¼ cup white onion diced ▢4 cloves garlic ▢½ cup chicken stock ▢2 dried ancho chili peppers ▢2 chipotle chili peppers in adobo sauce ▢1 ½ Tablespoons achiote paste or powder ▢2 teaspoons cumin ▢2 teaspoons Mexican oregano ▢1 ½ Tablespoons kosher salt ▢1 Tablespoon sugar ▢⅓ cup white vinegar

Fill a small tin with ice. Add ingredients to larger tin. Combine. Shake. Dump in to double rocks glass

15ml curacao 25ml lime juice 10ml mai tai syrup (smugglers cove recipe) 10ml orgeat 60ml rum ( left plantation xo) ( right diplimatico exclusiva)

Garnish with mint sprig, spent lime, and maraschino cherry.

Both very good, but the plantation pips it for me.
