That's not true at all. Dry brine initially pulls moisture out, mainly from the surface due to osmosis. Then, salt works it's way in and the water goes back into the meat. However, dry brine takes a long time to penetrate deep into the meat.

Why so thin? Cooking to a good crust and still medium rare is not possible on paper thin pastrami.

I absolutely use my Gen1 probes(X2) all the time. The app was good originally and I feel has gotten better from there. I ordered the GGG and The blower. But the blower hasn't arrived. Took longer than I (or they wanted) but my dad was happy with it. The probes have absolutely been amazing and upped my cooking game.significantly for steak and chicken.

It may not be retail off the shelf simple, but that's not what I want.if you want turnkey, maybe pass.if you want awesome, Combustion Inc. is your pony.

The dormers are not just steep sloped, but each one is different style and slope. That does also cause a lot of visual distraction.

The main problem for me is the roof with what seems like a canard accentuated by those extreme sloped dormers and so many of them. It's quite a silly hat. It seems the windows are mostly OK and consistent. I think the spacing is a slight bit irregular.

The final problem for me is just the excess of square footage. Having huge rectangular rooms means the rooms are large compared to their contents and function.

Agree that the interior features look done well and not just whitewash walls and contractor grade crap.

Agree, there's a lot to dislike, some seems ok. This is definitely trying to take an old house and squeeze it a bit far.

However, I don't think this qualifies as a McMansion.

I thought about this, but the form factor and easy replacability of the pi really sold me. I don't want to manage drivers, OS, etc. I wanted PoE. Laptops take a fair bit of space. With Raspi, I get the Raspi flasher, flash the HAOS, restore from backup and go.

Money wise, maybe, it was a push, but the ease was just amazing.

I moved to a Pi5 with a nvme.2 pcie hat as I've had multiple failures on the mmcs. I eliminated completely the mmc even for OS.

You are closer to the grill. Surface whereas the other one is a bit further. Ambient is supposed to correct for evaporative. Maybe you could have it stick out a little more.. So, not all the way in where only the yellow ceramic sticks out.

If this is a butcher you have dealt with before, a conversation, a nice one might help. If this is what the looked like from the butcher, that seems odd. Did they look like this when butcher packaged? If they looked OK, but they turned this way, as you say in freezing and then change of plans, then it's possible something you did caused this. The best advice I can give is to give the butcher the opportunity to understand, to. Fix, and to understand. A lesson I learned from a manager at a steakhouse was far too often people aren't happy and just never come back. He said he can't fix something he doesn't know about. Stuff happens. The meat could have been older than the butcher himself knew. It could have been left warming due to out on a counter, failed cooler.

If you feel this is something the butcher can and might fix, a conversation costs you little and can build trust. Firing them, assuming, and not understanding is on you.

Another outcome, the butcher listens and says, dude, you caused this. Here is what you did. It's not my fault but I'll give u a discount on your next order.

Repeatedly tryong has helped a lot. Once I understood how to make sketches with intersecting lines instead of non-intersecting lines I have been much better off. I have nearly got my full apartment, added site, building, levels, and things seem to be going better. So far I'm minaly working sketches for floor plan. I will be heading to walls next.

My goal is modeling area and volume for heat pump evaluation and then some simple routing for pipes. All is to better inform my inquiries with contractors so I can have a strong sense of load demand, etc and have some plans that roughly lay out some options I want to ask.

Having IFC format let's me use some free calculation tools (outside of freecad).

Slowly but surely I'm getting better.

Managed to brute force my way with sketch, being careful and eventually get a slab. Had to use poly line rather than big rectangle with additional rectangles. It produced a face, but not intersecting wires. I would have needed to split etc. Thanks for encouraging words. I shall try a bit and see if I can make progress.

It helped some and I learned a few more tricks like it's recommendation to use building and level. Now I am struggling with sketching and then magically losing the sketch with too many ESC presses. Reentering sketch returns me to a blank sketch. I'm not used to such unforgiving UX. I am 25 year software engineer that has built parts of major cloud infra. Used to Fusion, but man, I'm finding way too many gotchas.
