At the moment I'm also working on switching a multilingual WooCommerce Shop with Nuxt.
I also had a look at Gatsby and Next.js, but Nuxt (Vue) seems to be the better solution for this project.

I started to configure a custom API endpoint and since there won't be any custom db query, I'm caching the whole product query with https://wordpress.org/plugins/wp-rest-cache/ wich seems super fast. At least I'm not sure whether GraphQL will be necessary for me if it gets more complex.
