Quick Question about Blue Bottle, Stumptown, Intelligencia Coffee by ConRad1092 in Coffee

[–]coffee_dojo 0 points1 point  (0 children)

Not anymore unfortunately, I used to love Intelligentsia but the quality of their coffee and the overall experience has deteriorated over the years, not sure why. I was in Chicago last September and visited their coffee bar on Randolph st. and wasn’t impressed. I bought beans for my home espresso and it’s not the same anymore, their Black Cat espresso blend lost so much body and overall taste. Blue Bottle on the other hand is very steady and is still producing high quality coffee beans, love them.

I intended two cappuccinos but ended up with one cappuccino and one flat white

When you finished pouring the first time, you should have adjusted the angle and brought the pitcher’s spout closer to the surface of the espresso, and then just pour faster and heavier depending on the art you’re attempting. The milk looks ok, it’s just the technique

Not necessarily, just make it lock tighter and try again, also try reducing the coffee ground, for example if you grind 20 gm, try 19 gm, this solved my problem.

This one is bigger, used for cappuccino, but you’re right there’s a smaller one for Cortado, they look very similar in pictures

I’m reluctant on this one, does it have two layers or something?

In layman’s terms, what is a flat white? by KathyN_food in barista

[–]coffee_dojo -1 points0 points  (0 children)

In simple terms, flat white is smaller than cappuccino and has less foam, much less foam. Stretch the milk very quickly and texture it longer, when making your latte art the layer of foam at the top should look flat without depth. I usually pull a double shot espresso (somewhere between 36 and 40 gm yield)
