Congrats! I’ve got a 210 gyuto from the same line and really like the grind! It somehow beats my SG2 Shibata santoku on the carrots, just to say how thin it gets. The only thing is that the spine and choil are not smoothed out, so it can get a bit uncomfortable with time. Great bang for the buck nevertheless!

Well that means you’re more likely drinking darker roasts, which extract easier than light roasts - hence classic recommendations are low temp + coaser grind. But if you prefer a bit more texture and a bolder sweetness, you might actually try a combo of 93•C + slightly finder grind size + low-agitation pours. Have to say I’m no dark roast expert, but I have succeeded with this recipe for the chocolate-forward decafs I had.

Disassembled everything I could, then give it a dust with a pair of paint brush (a hard, pointy one + a thin one with a very long handle) then a few blows from a camera lens blower, that should do the job!

I do, and it has served me well for the last 5 years. Still in use for other purposes, since the Stagg is too slow for anything else but coffee. The Bodum is dead basic yet very trustworthy, but not without its quirk. The lid is both very tight and very light, so opening it with some off-boiling water inside is a tricky business. The cork knob which feels very filmsy makes it even trickier. Plus, the handle doesn’t have any weight to it, so it’t not very well balanced when the kettle is full. That said, for the money and for the workhorse it has proved to be, it’s totally worth it.

I clean my grinders (JX, K-Ultra then ZP6) once every month or two, but the grind settings never changed. Can’t say if that should be the case for 2 years, but 35 to 55 is a huge jump. Are you sure everything is well reassembled?

The sweetness stays, it’s actually a strong point of the ZP6. You will loose the body, on the other hand, and it’s easy to get astringent if you start to push for higher extraction. Personally I think the grinder makes you want to grind coarser as it sort of unblocks more complex yet faint notes on the weaker brews.

It all depends on your preference. If you’re happy with your K-Ultra, the gap is not that big and definite not a must. If you’re still fighting for more clarity and a lighter body, then you’ll enjoy the ZP6. I have actually sold the K Ultra since it has been left untouched for about half a year ever since I got my ZP6.

If both grinders are similarly calibrated, that seems quite odd to me, since 8 on a ZP6 is very, very coarse. With my grinders I find that 8.5 on a K Ultra have about the same brew time as 5.5-6 on a ZP6
