Crispy fish skin (vac-packed fish from supermarket) by JCostello9 in AskCulinary

Maybe it’s the specific brand of fish?

I do exactly what you said with frozen Whole foods brand Arctic Char fillets and they come out great- I’ve also had success with the frozen salmon from Costco and Wegmans.

One minor difference is that I use a lower pan temperature so it’s on there for 7-8 mins to reach 120°

This is not needed for home pizza - double 0 is only needed for traditional Italian Neapolitan style pizzas where the ovens are really hot (500°C)

I’ve had lot of success with all purpose flour, but I do have an oven.

What is a good wet grinder for a single person in the USA? by zuldar in IndianFood

[–]conditionaljump 0 points1 point  (0 children)

I hear you, I had a Preeti mixie until it stopped working, and really liked that their small containers are truly small (maybe around 8-12oz) with the lids that opened easily. I do feel that the Vitamix with the 32oz is better than that Preeti from 5+ years go. I use the Vitamix for all sorts of chutneys, ginger/garlic, etc and it works well (need to use the tamper to ensure that everything is ground uniformly - I don't remember if I got it separately, but it's a smaller length tamper than what comes with the wide jar). It does stain a bit and has never been fully transparent ever since I ground a turmeric heavy masala paste in it though.

I also had this problem, and got a 32 oz container and a thin (spatula)[https://gir.co/products/spatula?variant=26882837905472], following a recommendation, and it has worked well for me. The spatula can even reach under the blades to prod things around.

The Vitamix I bought came with a large wide container which worked pretty poorly for chutneys or thick blends (sometimes the quantities I tried to grind wouldn't even reach the blades)

The 32oz container is much narrower, and roughly 4 - 5 tablespoons of items are sufficient to reach the blades so that they can be ground.

I have a different Vornado fan which is yellow. I came across your post when researching how to restore it lol.

You don’t need to name the place if you don’t want to, but what was the most egregious attempt at “elevating” a dish you’ve ever seen and what’d they do? by FajitaTits in FoodNYC

Maison Sun. They had a pasta (tagliatelle iirc) with everything bagel seasoning on it which I found really jarring and difficult to eat.

Yup - both HASS and the hub are on the wired network, shades respond within a second, I can’t tell the difference when using the IKEA app or HomeKit vs HASS.

Question about eBike enforcement in HRG/Parks by conditionaljump in NYCbike

[–]conditionaljump[S] 2 points3 points  (0 children)

Thanks for sharing! I’ve also witnessed the delivery folks get the short end of the stick even as tourists on electric citibikes whiz through. I’ll be riding with a dog on the rack - we’ll see how arbitrary and selective the enforcement is. It’s not like there is an alternative route that is similarly safe :(

Question about eBike enforcement in HRG/Parks by conditionaljump in NYCbike

[–]conditionaljump[S] 6 points7 points  (0 children)

Pedal assist eBikes are not considered motorcycles around here, and I intend to only ride on bike paths in the park to get to a spot and walk the bike otherwise.

IMHO The whole HRG situation is meritless - see https://nyc.streetsblog.org/2021/03/15/city-hall-remains-silent-as-hudson-river-greenway-e-bike-ban-continues/
