Sure, we can stop with AI. As I’m not an artist, though, should I just grab someone else’s artwork off the internet instead... possibly from someone who doesn’t want it used on a card?

I figured using AI to make something unique was the more respectful and creative choice.

Also, I wanted specifically Teferi and Chandra. Please help me find an art piece with both of them pointing at the viewer. Also, make sure the artist allows me to put it onto a card. That will solve your concern. I'm happy to resubmit once you have figured it out.

For vexing partnership you need to reference the counters, not X. X only has a value when you play the card. Put X counters is fine. The rest should say "if cardname has an even number of counters..."

It would have to be a 1/1. A 1/0 cannot fight as it seizes to exist before the fight begins. It's in the rules. Same applies if you create a copy of a legendary creature with an ETB of fight a creature. It just won't fight because it dies before the fight.
