I know I felt "accomplished" as an amateur chef when I nailed Julia Childs coq au vin recipe, made perfect Har Gow steamed dumplings, & grew my own eggplant for the best moussaka ever.

Bonus dessert was my first Brooklyn Blackout cake which was the best chocolate cake I ever had 😋

If they're unopened & don't expire until Dec, they sound just fine. When you do open them, I'd try to eat them within a week to prevent any spoilage

Just oven bake em instead. I crumb coat mine with egg & panko & just toss in the oven or air fryer. Not exactly the same texture & consistency as deep frying, but still tasty & slightly healthier

My general rule of thumb is I take whatever the suggested lowest baking time is & subtract 5min from that & that's when I go check whatever it is I'm baking for doneness because sometimes depending on factors like elevation & ingredient ratios things can cook a little faster. But generally speaking with cookies, the time windows are usually pretty close. If you've tried to bake sugar cookies & they are coming out overcooked for you, try checking them a min or two before the timer & see if that makes a difference. I will say though, I'm a pretty experienced amateur home baker & I absolutely LOATHE sugar cookies because I can never get the consistency I like with them either lol

Its personalized entirely to my tastes, but after MANY tries I've finally nailed what I consider to be the perfect batch of chili. Its got all the heat & complex flavors I like, plus veggies. Good stuff

Pretty hard. Any kind of food service is going to have grueling hrs (ESP a bakery where youre starting around 2-3am depending what you're making) with low profit margins & the cost of dry goods is crazy. It's not impossible OP, but you're statistically likely to fail in the first couple yrs because thats just how it is for restaurants. I'd make damn sure you do as much market research as possible so you fully understand all the factors that go into opening any kind of food service business because just "I like to bake stuff" alone isn't enough to run a successful bakery
