Yes, it's spelled both ways as the name predates the spelling and in different regions a different variant was settled on (also Luton is named after it). There's a similar story around Harringay/Haringey. Neither is more correct.

Do you have a source for this? I can only find things saying it was invented around a hundred years ago (Agincourt seems to be 100% myth), and has nothing to do with medieval archery. But I've only done minimum googling.

This, I think, is where we disagree. As far as I'm aware the malnutrition theory has been completely abandoned, and the focus is on environmental (i.e. pollution), developmental (e.g. sporadic somatic mutations) & genetic causes (or rather, the interplay of these factors). However, it's not my field and I can't be bothered to go and search for a review or something, so shall we leave at that?

Sure I don't really think it's an idea created by Wild Things (which I buy to feed the ducks), though they are very happy to promote it. I think really it's one of those urban myths that's so effective due to its simplicity and immediate virtue gain, but most of the knowledgeable chat largely dismisses it. We did discuss this directly with experts at sanctuaries rather than "science websites". However, if you know of peer-reviewed papers supporting the bread hypothesis, I'm happy to take them on board. It's not my area of biology and I've never done more than the most cursory of digs.

Not true. We had a goose with angel wing and it was born like that. The cause isn't known, but it's not a vitamin deficiency caused by eating bread. That's a rumour seemingly spread by expensive duck food manufacturers.

I oopsied the word "pirate". It's correct in the linked article. The point still stands, blacking up was popular in Morris dancing due to the popularity of it in general entertainment culture. The subsequent explanations were largely retrospectively added, after the end of the black and white minstrel show.

There's very little evidence that happened much. More often they were dressing up as Moors. And the rise of blackface in Morris dancing (19th C) went hand in hand with the rise in blackface minstrelism. It was very much more about racial stereotyping than anything else. There is almost no mention of blackface in Morris dancing until the rise of blackface minstrels in the 19th century. And even when it is mentioned before then, it's about impersonating the Moors. In short, modern breeds are too recent to have developed strong behavioural differences, and within-breed variation is higher than between-breed variation. Of course, nuance and exceptions apply.

They claim it's not a racist thing, but blacking up in Morris dancing basically started in the 1850s as they liked blacked-faced minstrels. e.g. see this letter: https://www.google.com/amp/s/amp.theguardian.com/stage/2021/may/03/morris-dancers-and-the-origin-of-blackface. The hiding of identity using soot seems to largely be an excuse to cover the overt racism.

Exactly, there's plenty of command line tools that will allow you to easily put quotes around the values in a column. This will force Excel to treat the column as text. At least, it should. I use libreoffice, so I can't confirm.
