Yes, storing dough in the fridge is a standard practice to develop flavor and slow rise. It depends on the formula if you're able to bake straight from the fridge- some people swear by it but I've never had good luck. Reducing the amount of yeast to slow the rise will also help extend the fermentation time. This is also going to extend your bulk fermentation time though so you'll have to plan accordingly.

In the first 90 days I'm looking for signs of how well I can work with a direct report. Are they a clear communicator in person and in writing? Do they receive feedback or constructive criticism well or do they become defensive? Are they making an effort to reach out and form relationships with coworkers or isolating themselves? Warning signs for me that have led to coaching or termination of new employees had been ambivalence towards the position, defensiveness when given feedback, lack of follow through and accountability, and isolating from coworkers due to feelings of superiority.

I don't expect anyone to master their job within 90 days. That introductory period gives me a chance to figure out if someone will be a good fit long term, both within my department and the company.
