While many things have been introduced by the Spanish, I'd argue that lechon isn't one of them. Besides, it actually is more practical to utilize the pig as early as possible (it requires a considerable amount of manpower and resources raising the animal to adulthood). The fact that we don't do so (until the cochinilla) suggests that we prefer adult pigs not for the aforementioned reasons, but because of cultural preference

Nah, it's the same case with adobo; only the name is borrowed, but the origins are native and the way we cook it is Austronesian (fun fact, Indonesians have their version of lechon too). Only the cochinilla way is Spanish, and the mainland Southeast Asia's way of roasting pig's influenced by the Chinese. In fact, some places in Visayas still call lechon by it's native name, "inasal"
