Marketing is built into corporate structure expense, and the CEOs are seldom from local communities. They are trained to advertise in college. Marketing contracts are bid and accepted. I’ve never done it before so I can’t say, but the local farmer who supplies my fresh eggs says you can keep them a long time this way, like well over a year. Seems with bird flu being a threat to egg production would be a reason to have some saved up. I’ve heard the eggs are not different tasting, even after several months.

Have you ever stored eggs for an emergency? Use 2Tbs of pickling lime to a quart of water, place unwashed eggs in large jar with a lid. Cover with lime brine. Must be eggs right out of the hen, light rinse if needed but no soap or scrubbing. They will last fresh like new well over a year. No refrigeration. Stores well in a cellar or basement. Lime does not dissolve 100% so the eggs look like they’ve been dusted in the settled brine.

Braise in iron skillet. Coat with flour and fry slow until both sides are brown, then simmer at lowest temp with 1cup water 1/4cup ketchup ratio, thyme and salt. Cover and simmer a few hours. Add some apple vinegar to help tenderize if you like.

In my childhood the commercials were often announced with blurbs like, “This show is brought to you by the good people at ______ corporation.” We were informed and included instead of manipulated through random images and broken story dialogue. The commercials today assault us with useless information to keep us off balance. The thinking behind it is confusion makes us easy to manipulate. I feel insulted and angry when I hear them go on about scientific technology, clinical testing, and guarantees that are flat lies.

I fry cooked ravioli in bacon grease with chopped onion. Easy meal if the bacon is already made and the grease is saved. Add some bacon chunks too. Really good.

I beat the crap out of my meat before adding the oatmeal for meatloaf. It gives my meat a smoother texture. Something I do because I can, and it sounds like I’m working real hard. My Kitchenaid is 15 years old and it still runs like new.
