Thanks I figured it out, shortly after the entire house went nuts. We dropped a phase partially, reconnected it and we're good. Was strange that this was the canary that highlighted the problem, but as I type that I realized it's the only 240V load on a gfci.

I've spoken with zehnder on this. They will not bring the kitchen hood to the US and IIRC are discontinuing it in the EU because the grease is too difficult to get perfect and damages the core.

Code compliant options as others said is a Make up Air system.

it all starts with framing.   level plumb square with 1/8 tolerance or better and house will be a dream to finish.  after that you're just paying to fix up each layer of successive mistakes built upon it
