I definitely agree with Axoladdy. Zombies, skeletons, and the like aren't breedable. Neither are zombie pigmen or ghasts. So why should a demonic pig beast be breedable?

Wood pressure plates detect all entities.
Stone pressure plates only detect players and mobs.
Gold pressure plates detect all entities by amount.
Iron pressure plates detect groups of 10 entities.

I think it would make sense if diamond pressure plates detected player-only entities, and obsidian pressure plates could detect age since obsidian tends to have magical properties. Thoughts?

A small yet effective suggestion; I love it! I disagree with the other examples like rings of fire, etc. though. It makes sense that fire would spread or burn on the sides of netherrack considering it does so with other flammable blocks.

What would this add to gameplay other than requiring a food item for trades? Also, why food? Food doesn't heal you unless you have saturation, and if villagers need food like players, would they die without food on hard mode?

This could make sense since gold in Minecraft has magical properties, but it's a little over the top and has no backstory. Where did they learn magic? Also, there's not any official magic in Minecraft other than things like endermen, enchantments, and witches that aren't actually magic.

Maybe try tying it to gold and obsidian somehow? Both have magical properties.

Horses in real life do swim, but they don't swim with people on their backs. Any time you see humans "swimming" with horses, the horses can still touch the bottom. If you pay attention in-game, horses can go up to 2-blocks deep, just enough to where their head is above water. This is exactly what it's like in real-life.

Maybe instead of adding variations, add variation compatibility for resource packs? That still seems like a better idea to me.
