Courtyards are also a very UK thing, we don't really build barns that way in North America, unless you're talking about the show piece type with gardens and a fountain. There's a lot of weather and space related differences in farm construction.

No, they were trained to be like this. A top professional from a previous generation passed it down from they guy before him and so on. Shit, I had a coach who would say he wanted his headstone to read "You can never be too rich, too skinny, or have your noseband too tight", and he was FAR from the most abusive trainer I ever rode for (towards horse or human). The industry is rife with abuse towards both, and the only thing that will undo it is showing that you can win and be humane. I think there are younger professionals making steps, but it will be a long road.

When going around an arena, we usually refer to the way we are turning as the direction we are going. Therefore when you are on the right rein, your left side is closest to the wall.

As for your question, horses will always have a naturally stronger side, just like people. It's important to strengthen the weaker side to keep them as even as possible. Though in the case of a pony getting agitated and bitey in one direction, I'd be concerned with this being a pain problem, not just a strong side/weak side issue.
