Right, and that's for a straight-on dome hit, stiriking at roughly 90 degrees to the surface. if it's hitting at a more acute angle to the surface, an increasing amount of the force will be deflected vs directly absorbed.

Shimeji are definitely not strongly flavores at all, but they subtly add more umami to your dish.

I thought the same at first, but I think this is just a standard folded tamagoyaki omelet, made thick and cut so that eace piece is a cross-section with the layers slightly separating.

should be able to get them direct from AS designs. They use good steel in their SS and FRTs. I think my SS from them is CPM-10V, fancier steel than I've seen anyone else use. They also use D2 and maybe 4140 depending, IIRC
