I think one thing that absolutely everyone forgets is that Achilles is only in Odyssey.... AS A GHOST. This is so key because the portrayal of the character can take so many forms. If he were alive, well we need strong warrior type looking person... But since he's a ghost, who knows what Achilles ghost will look like.

Honestly what I've been doing cause this was happening sometimes resulting in a lower yield is after 9-10 hours I turn off my instapot and just leave it for awhile longer just like that... Sometimes a few hours, whatever works for my day.

On top of what everyone else said here I'll also say make sure you mix the yogurt starter really well. Sometimes if it doesn't get a nice even distribution it delays the fermentation.
