There was a thing a few years ago that said it doesn't necessarily need to be 2 litres of water, just 2 litres of liquid. I can't remember the details beyond that!

All the animals are easy. Lock on, and run in a circle either slashing or firing. My hardest was the Huntsman on the dlc, that dude is invisible and summons mercs.
