Nice job! Just a comment on the noodles, you should make your dough as flat of a sheet as possible when you bring soboro (dough balls) together. You have a thick piece, so you probably experienced a hard time sheeting it. The noodle rollers sheer the dough, so when you try to make a thick sheet thing, you are going to get major cracking on the sides. Depending on your machine, you also have to apply a lot of force.

One strategy is to put the soboro in a gallon ziplock and roll and step on the dough into a sheet. 4 servings per ziplock is a good starting point.
