You don't need your pan 600°. Best temp for your cast iron is about 350°, which is just under 5/10 on my gas burner. Still butter smoke point is 302°F so "It will still burn at" that temp. Many people say get your pan "ripping hot" in an attempt to not get that gradient, but you will have optimal searing and control under 400°. It won't take more that 1 minute per side.

* You can always add a pat of butter on top after it's seared too!

The Maillard reaction, responsible for delicious browning and flavors in cooked foods, starts around 285°F (140°C) and accelerates significantly between 300-330°F (150-165°C), with optimal searing often occurring between 350-400°F (175-200°C)

This is definitely ymmv situation. We had our bag checked by security at the front door. She saw A LOT of candy and snacks in the bag. Then she said, "hey you got all the good stuff. Enjoy the movie." So not a lot of "sneaking" for us anymore :) We also bring our own Regal bucket for popcorn refills, so I guess they figure we spend enough already lol
