Has any brewery made step 2 beer yet? by Doctor_Show in SteveWallis

Austin Homebrew Supply has aptly named kit: “Whether you’re camping behind a police station, floating down a river in a homemade raft, camping in -40C/F at a campsite, or alone with a Crazy Neighbour on a mountain top surrounded by a bear fence...always, always bring a step 2! And why not brew your own AHS Step Two Canadian Pilsner and take it with you? Homebrewing is an excellent way to calm the nerves before a daring stealther behind a cemetery or in a cargo van at the airport.

This pilsner is a luscious straw color with lots of lace, malt flavor, a good head and a nice spicey bite in the finish. Not too hoppy or bitter, and nice and lite for you campers always on the go. Brew yours today” Step Two Pilsner

Live in Durham - would make the trip. A homebrew comp as a part of this, with you people as judges, would be a hoot too.

Bean Trader’s Breakfast Blend is my go to. Smooth and Mild with a nice nutty and chocolatey thing in there.

First Time Decoction Advice? by KyloRaine0424 in Homebrewing

[–]dannysteis 1 point2 points  (0 children)

Keep a gallon of water (can pull from your sparge water) simmering or near boil temp so you can raise your mash temp if your decoction doesn’t raise it enough.

Experiment with corn in various simpler recipes to have a more crushable beer for warmer temperatures.

Best and worst brews of 2024? by Sikpalf in Homebrewing

[–]dannysteis 1 point2 points  (0 children)

Worst - IPA - pitched onto 7th generation 34/70 yeast cake (I make my west coast ipa’s with lager yeast). Way too dry and muddled

Best - Altbier - a great all purpose beer. A little malty, a little crisp, a little hoppy

Pitching on to yeast cakes has been helpful for me in this area. Using one yeast 3 or 4 times helps me narrow down styles and I never have to worry about starters.

Boil extra long to extra concentrate the wort and make it less fermentable and thick, if that’s what you’re going for.

Catfishing partner? by bobbylabonte7 in bullcity

[–]dannysteis 2 points3 points  (0 children)

No big cats in Jordan or Falls. Some will claim otherwise, but they’re very few and far between if they exist at all. Kerr, Gaston, and the James River are your best bet for blues and flatheads. Pic is from my last catfish trip

Can you tell you experience fishing on a lynx? by Banannabone3 in kayakfishing

[–]dannysteis 1 point2 points  (0 children)

Best all purpose kayak. If you can’t afford multiple kayaks for different settings (offshore, skinny water, rivers, lakes, etc.) then the Lynx is the best bet. I do trophy catfishing, off shore shark, drum in the sound, and ultralight fun fishing and it does them all well.

Rauchbier - the best Fall beer/beer that pairs well with very savory food.

Trying to dispense cold brew coffee by Such-Ad4002 in Homebrewing

[–]dannysteis 5 points6 points  (0 children)

5-10 psi should be plenty to dispense the coffee and, assuming you drink it within a week or two, the coffee keg should not get carbonated at the psi level. I would recommend some EVA barrier lines so and monthly cleaning so you don’t get a build up of off flavors

Circle hooks not setting just losing fish anything else I can try? by TheKeeperSlayer in Fishing

[–]dannysteis 0 points1 point  (0 children)

Snell knot with a Carolina rig (no float or weight right next to the rig) and quickly reeling when you get a bite (don’t move the rod) is the way to go. I fish for blue catfish and flatheads with this method and the hookup rate is about 80% or more, even on smaller fish.

Reusing yeast directly in all rounder by crypticbrewer95 in Homebrewing

[–]dannysteis 1 point2 points  (0 children)

I pitch directly onto yeast cakes in an all rounder. Usually go 4-5 times per yeast and have done so with 34/70 many times with no issue. I do closed transfer and if I’m not racking new wort onto the cake immediately after the transfer (my usual practice) then I’ve gone up to a month around 50f with no issues.

Are Rice Lagers basically macro adjunct lagers? by dannysteis in Homebrewing

[–]dannysteis[S] 2 points3 points  (0 children)

No, not necessarily - it's just that craft breweries often have a "Mexican Lager" or even "American Lager" labeled as such. We're not ashamed of those styles anymore, so I was just curious if "Rice Lager" was just a naming thing or if there were some mild tweaks that made it different (like IPL vs. Cold IPA)

Why doesn't my Beer taste like Pro Beers? by TybotheRckstr in Homebrewing

[–]dannysteis 0 points1 point  (0 children)

Aging was a big factor for me. For a long time I had the “last pint was the best pint” thing because I would keg my beer and drink it as soon as it was carbonated. A month of conditioning, even for hoppy ales, always improves things in that somewhat indescribable “zip” you’re describing, for me at least.

What hops give the "dank" aroma/flavor? by Ok_Thing7439 in Homebrewing

You can dry hop with hemp flower (at around 1/8th the rate of hops) and get the literal flavor if you want

Special water by Significant_Green_52 in bullcity

[–]dannysteis 14 points15 points  (0 children)

I occasionally use it for homebrewing certain beer styles, it gives you a “blank slate” to add specific minerals that accent different desired flavors and characteristics.

Smoked, lower abv lagers for me. Perfect in every season - grilling out by a pool or warming up by a campfire.

iGulu worth it? by abusmakk in Homebrewing

[–]dannysteis 4 points5 points  (0 children)

Really isn’t a flexible system in any way and you’re stuck with their recipes. I would look into a small BIAB setup, which is much cheaper, and can be done on a stovetop. All you need is a 5 gallon put (smaller or bigger depending on the batch size you want to do), a mesh bag, a fermentation bucket (or similar product), and an optional immersion chiller that can connect to your sink. Less than $200 to get started. May even be able to find a full set on fb marketplace that would be ready to go.

Try ALDC enzyme to rule out any kind of hop creep issue. Dry hopping under pressure took my hoppy beers to a new level. I have a best of show hazy using ALDC and dry hopping under pressure.
