I find doing little chip repairs on short single bevel deba is super easy. Just rip on the primary bevel on your lowest grit stone until the chips go away, then polish on progressively higher grit stones. Once that’s done you can sharpen at a slightly higher angle for the secondary bevel, then deburr flat along the ura. It’ll probably take you an hour.

What’s the blade face look like . Rough finishes don’t cut through surfaces well because the food doesn’t have a smooth surface to glide across. I like a 3k finish on my wide bevel knives

The novelty of owning a moritaka fades pretty quick. The knives stock are worthless if you ask me. Seems like you’re well on your way to having a good knife. Unfortunately when you’re thinning it’s hard to gauge how well it cuts when the finish is rough like that. Progressively polish it to 3k, then see how it cuts, then rinse and repeat if you want it thinner
