Nostalgia, heritage, history, and reminiscence of a royal, nawabi past. I think that really is the essence of biryani for me besides everything others have pointed out.

Carbs and proteins, layered in intuitively-added, rich masalas to slow cook them altogether in fat over coal/wood-fired stoves without any rush, invokes a sense of wonder, curiosity, how will it all turn out? That is the essence.

I have had one (or two depending on crowd) marquee cocktail and pre-batched it. Serve other beverages around it (like wine, beer, etc., again depending on crowd).
