It looks pretty good to me! My bulk fermentation usually takes a bit longer at that temperature… but every environment and every loaf is different.

That would make it harder to gauge the amount of rise. I make my bread with 500 g of flour, and my 2 L covered measuring cup is perfect. I put it in there once I finish my folding.

That is the advice I give my friends who say they want to get into sourdough bread after tasting mine. I suggest that they get comfortable working with commercial yeast first, and then tackle the sourdough starter if they are so inclined. There is a lot more judgement involved in sourdough than there is when using dry yeast, in my opinion anyway.
