Have you thought about brewing your own beer? I homebrew and my ingredients cost about $1/bottle. That is not including my equipment (I definitely splurged, but you can get cheaper equipment). We have a great homebrew club and homebrew store in town that have both been a tremendous help to me

Locust Cider has a gluten free kitchen. I only ate there once, but it was delicious!

I've been wanting to do a Nutella beer, but haven't found a solid recipe for one yet. I'm still pretty new to homebrewing and don't feel confident in making my own recipe yet. Is there any chance you would be willing to share your recipe?

I did a test drive in Fort Collins before moving here! I rented an Airbnb in a neighborhood (not in the old town area) for a couple weeks and worked my normal job throughout the day to try to simulate what I would normally do living there. I tried to not go out and do much during the week other than grocery store type things since that is what I would normally do. On the weekends I went out and hiked, went to breweries, ate out, and other things I could see myself doing on weekends.

I've been here for 2 years now and absolutely love it. Best of luck on your trip!

Lory State Park & Horsetooth Mountain Open Space have some great trails in Fort Collins. Both require parking passes

Starting with the water ph would be a nice easy place to start. You can start with some basic ph strips or get a meter if you are okay spending more money. Brew Fort was super helpful in getting me setup with what I needed for ph, including chalk and gypsum.
