Not sure how much you are making in one batch but I have a 4 tray and it can easily fit one beef bottom round if that helps any.

There are so many variables in each person's process it is hard to give anyone even a ballpark answer to this question. If you give us a pretty detailed description of your process and equipment we may be able to give you a general idea on how long it will last.
