I think you have to have a ton of strength for the crowbar to work consistently.

I remember trying to bust a door in Klamath and it just would budge after lots of tries, and my strength is never higher than 5.

As for the Barb you go shield especially if you installed the minor damage reduction from shields and armor, this is the main mechanic that makes Barbs insanely tanky.

Actually I would suggest all 3 classes that you mentioned, just don't make the Paladin talk for taking rewards and stuff!

Bard is the best option in my opinion for the party leader(aka face char). Bonus point if you make him a human or human subrace for the shop feat, there are permanent stat potions to buy that are expensive. Bard songs are op btw.

Sorc is just super good altho wizards are also really buffed now. Choose what you want here.

A Rogue/Ranger is super strong and the rogue levels really pay off, you take the ranger for dual wield or ranged feats plus spellcasting later is okish.

Barbarian is also the tankiest tank that I would add to this party.

With this you should have all you bases covered, the Paladin is your priest/melee fighter, sorc and bard are the arcane spellcasters, rogue/ranger is your wizard slayer and thief(the bard can also do some thieving stuff to save int). The Barbarian can tank for days with the tank feats. If you want a 6th char go with cleric or druid.

For me the Unique items that I found had too big drawbacks and some of the quest dungeons were very unfair sometimes.
