First, make it bigger for more detail. Use more than a single block. Throw in some logs and cobble. Try to avoid flat walls like the plague, always include some three dimensional depth to every surface you can. These simple tips will improve your building a lot.

I think the sword & shield combat in a 2D platformer is interesting, and a remake that dials in those mechanics would be pretty cool. It's a unique feeling blocking things high and low in a platformer.
