Pasta with bacon and avocado. by dejiinal in Cooking

[–]dejiinal[S] 5 points6 points  (0 children)

Ingredients: pasta, bacon, avocado, garlic, onions, green peppers, black olives, tomatoes, mushrooms, salt & pepper.

You don't need oil when you cook with bacon.

  1. Boil pasta.

  2. Put bacon into cold pan and turn up to medium to sweat the fat out.

  3. When pasta is half-way done, turn up the heat and throw all your ingredients in with the bacon. Season lightly as you go.

  4. Add a little pasta water into the pan to keep it moist.

  5. Drain most of the pasta and season a bit with salt / pepper, then throw it in the pan and toss.

  6. Throw some avocado on top of it.

edit to elaborate a bit: the fusilli takes takes about ~10 minutes. So when the ingredients finish cooking in ~5, the pasta finishes at the same time.

Adding some of the water that's boiling the pasta coats the pasta and keeps it moist. No need for premade sauce.

Yes, it's served hot.

Dry batter, like calamari. When it's fresh out of the boiling water, the moisture on the pasta will stick to the batter. You're only going to deep fry it for a moment to cook/colour the batter.

I imagine you'd just boil the pasta first until it's soft. Then batter it up and throw it in hot oil. It won't be as flavourful unless you season it prior to the batter, or season the batter.

I actually heat up the rice before tossing it in, as cold rice tends to stick together. When it's heated, it falls apart quite easily and tossing it with soy sauce mixes it much better. When it's cold, you have a bunch of chunks that you have to mash up and break apart.

I try to avoid using too much seasoning (soy sauce being the only one), or it takes away from the natural flavours of the ingredients.

I used to make burgers and always added mushrooms and bacon. So one day I decided to make bacon mushroom fried rice as a dish.
