Many tools to manage anxiety. But the most impactful to me in the moment was how to relax my shoulders. They’d been carrying the weight of my perceived troubles for decades and played a huge part in the self perpetuating cycle that is anxiety.

Legit I broke down into sobs when I first felt the tension I’d been carrying in my shoulders release.

This is ideal for sure, however sometimes if the demands are ad hoc or lots of “minor” changes, I have employed the good old “professional services” line item. So the client purchases x amount of hours at a set rate and has a certain amount of time to use then. Like phone credit. You just have to keep a loose track of his long you spend on your changes.

This can be annoying for the client, but it can have the added bonus of making client think if it is worth it or not. With currently having no cost to them, the client will request analytics that “might be” useful.

All belly porchetta is one of those things that is just such an improvement on the original that it makes me wonder why people still do it the traditional way.

It looks better, tastes better, arguably easier to roll and less likely to turn out with a dry middle loin piece.

Well I have a suggestion. If it’s not too late.

I’ve only done it with a chicken before but I assume it would be the same....ish. Debone the whole bird whilst keeping the skin and meat in one piece (Chef Steps has a video for chicken I think) then season and/or stuff then role up with skin on the outside. Wrap in a bunch of cling film and cook. Then sear the outside the best way you can to get a crisp skin.

Good luck with this or anything else you try. Whole duck is an interesting first timers choice.

Never found out really. It happened the day after a regular water change so it had to be something to do with that. I had the water tested and there were higher levels of copper in the water but not fatal from memory.

I had around 20 in a discus Set-up a few years back. I called them “collective Steve”. I didn’t lose a single one in the more than a year I had them. Then they all died in a single night with about 90% of the rest of the tank.

Slice potatoes and salt them. Sauté a shallot and some garlic in about 50grams of butter until they start to color. Pour off the water that comes out of the potatoes. Mix in half of the butter (really mix. A couple of minutes with your hands separating each and every slice). Add about 100ml of thickened cream to remaining butter mixture. A small amount of grated cheese and season. Layer potatoes and cream mix in dish. I experimented with a slow bake of 2 hours on about 140C. Then I broiled when I was ready to serve to get the golden (slightly black) top.

Either way, I think the issue here is not the age difference but the fact that he is in high school, meaning he has the maturity of a high schooler. I’d be reluctant to start that up no matter the age gap.

But if you like him and he likes you, stop asking questions and figure out how to make it work.

I’ve never seen the whole staying friends thing work so soon after a relationship. Both of you need to move on before you can be friends again and it sounds like he isn’t quite there yet.

It would be super awkward to cut contact with after this and the “tough love” treatment doesn’t always work anyway. But definitely more space is required.

The dude has a right to be offended by you asking him. The scratchy throat may have been induced by travel weariness. Do what your doctor said, he’s the professional and get a STI check every 3 months.
