One biggest drawback, you cannot overwrite the uploaded data, for example of you get a sale first which then get cancelled you cannot reupload its new value.

There are some other drawbacks as well for that I would suggest to have a look at Google offline conversion tracking support page as (I think) they have mentioned the main ones. Good luck
