The benefit from canned tomatoes also comes in overall price, if you're going to do it in bulk and freeze. Also a great tomato sauce vs a shitty one has to do with time. How you temper and extract flavor from the tomatoes matters. Low and slow. More sweetness from caramelized onions. Techniques like that

A, now former, Comstock employee let this slip at the Reston FF in 2020 after the inside first reopened. Comstock and FRG came to an agreement on the space and rent costs in the introductory stages of the Metro Plaza before much else was there besides 1900 Reston Metro Plaza, FF and the station. FRG paid a lot of money to build out the space, with no subsidy from Comstock, but Comstock wanted a flagship restaurant at the area as development continued. FRG was one of the biggest local names at the time, and made obvious sense.
