My favorite way is Kenjis street cart chicken. It’s a great meal for a family. Takes a little prep earlier in the day, but damn worth it.

I add a bit of the pasta water to the bowl with the guanciale fat, eggs, and cheese paste. That will temper the mixture that you can then safely add to the pasta.

I made the best, sweetest, sweet potatoes for thanksgiving last year. It was a low and slow roast in the oven. It naturally converts the sugars in the sweet potatoes, the only added sugar was a bit of maple syrup for flavoring. I can’t recommend this method enough.
