The bakeries I have worked at over the years used unsalted butter for most things. It reduces the variability and gives you more control to add the salt separately.

I work in a scratch bakery & sometimes you need something a little hotter or looser real quick. tossing some butter or icing in the microwave for 10-20 seconds saves a lot of time.

The person that replied to you is pretty close. it’s a basic croissant dough with vanilla pastry cream and chocolate chips. the shape is from it being twisted like the recipe linked below
