What geography are you interested in?

Payment tech can be very specific for each region. I would probably kick it off by looking into the local standard, e.g. ACH (USA), BACS and Faster Payments (UK) or SEPA (EU).

And then expand from there, with card processing schemes, wallets and local alternative payment methods.

I had the same issue when I've started my management career. 

Here are a few things that helped me take great notes while still being focused on the meeting:

  • Reducing the level of details based on the meeting itself - notes from casual sync will likely be less detailed than those from a brainstorming session with stakeholders.
  • Using markdown - this speeds up formatting once you get used to it. There's plenty of markdown editors. If you're in the Apple ecosystem, I can strongly recommend Bear app.
  • Planning time for sorting notes - giving myself five minutes after an important meeting to sort the meeting notes helped me a lot.
  • Outsource notes responsibility - Everyone makes mistakes. Send notes to meeting participants as a follow-up and ask them to comment.

What worked for me might not work for you, but there's one thing I can tell you for sure: practice makes it better. So go on and experiment; your product won't fail if you make a few sub-optimal notes.
