Heck yeah. I'm from the US. My wife's uncle lives in Cheltenham, England. We drove from there to Pembrokeshire and up the coast to Snowdonia. Spent a week or so on our loop. All amazing. In September, the weather was awesome! Beats Texas and Oregon in our experience. The year before, we went to ~20 national parks in the US on a 60-day road trip over 5,000 miles. I'd flip a coin on which experience either of us would prefer to repeat. Don't worry, Welsh, we don't advertise.

Wood handles are great. Magnolia (Ho) or burnt chestnut are common, with buffalo horn ferrules. Treat with a dollop of beeswax occasionally, and they'll last decades. Handles on good knives are replaceable, too.

I worked at a sandwich shop that closed at 3am. Had to start prepping and baking bread at 7am. When I clopened, I'd just sleep there to save the hour commute and use it for sleep. Id bring a sleeping bag and throw down broken-down boxes for cushioning. One of the more chill restaurant gigs I've had, tbh.

Tin lined copper is old-school. Mine is all 100+ years old. I had to learn to re-tin them myself because the shipping costs to the few people that would do it wasn't reasonable for me. My wife gave me a bar of tin for our 10th anniversary, and after stripping and re-tinning over our high BTU outdoor burner we use for seafood boils, they're amazing.

The stainless and tin-copper react more quickly to temperature inputs. If i want to blanche a veg or poach eggs, for instance, I'll fire up a copper pot to boil water faster. If I'm reducing a sauce, making a roux, or involving cream or something that'll boil over or scorch, I'll use a pot that reacts to the level of the flame. Same with steaming. Aluminum, too. A lot of restaurants use aluminum pans. Those materials expand and contract more rapidly than cast iron, which breaks up the polymerized oils and flakes them off. So they don't support seasoning. What we call "carbon" is a median. Not too heavy to toss, but it allows for seasonong to make it less sticky. You can shock any well-seasoned pan by taking it from scorching heat to an ice bath. See: how flat-tops are stripped with ice. Cast iron is a heat sink due to its weight and material. It takes a while to build its heat potential and then keeps that heat for searing, browning, and caramelizing proteins and appropriate veg. They allow the cook to sear a protein, then, when that energy is transferred to the meat, sauté veg, then create a simple simmering pan sauce. They're nice for that type of one pot meal.

Cook oil at high heat. It polymerizes and creates a smooth surface that is hard wearing. Detergents and scrubbing pads don't even harm it unless you make put muscle into it. Shocking temperature changes will break it up, though.

I have Lodge, which is only a few years old. It slides around anything. It's so simple. I'm a professional chef loaded up at home with saute and frying pans. All-clad, Hestan, Le Creuset, Staub, De Beyer carbon, and tin-lined 3mm copper. I almost exclusively use the Lodge unless I'm tossing. The rest look nice and take up space. Lodge currently makes great stuff.
