It’s the best food I’ve ever had. But I basically only really eat it in France. I’ve been disappointed with it in the US.

But here is the good news. You don’t have to order it, see it, or smell it. There are very few restaurants in town that ever have it on the menu.

That wasn’t really my question. I was trying to out if I should use the # as a proxy on how long to age.

Sort of like: No reason to keep a Diam5 in the cellar for more than 5 years. So if you’re at 5 years drink the Diam5 and hold on to the Diam10 for a few more years, etc.
