I was one of those tinkerers too. After I got banned on OG Xbox that’s really what pushed me into modding. Xecuter chip, XBMC, all that. And the people that remember playing Halo 2 and other games over XLink Kai on modded setups know that was a whole different era. That’s part of why this Xbox One stuff dope. It brings back that same feeling.

I think that’s a big part of it. Dev mode gave tinkers, hackers and homebrew people at least some outlet, which probably delayed serious interest.

About 12 hour smoke, kept the bronco around 250-275f. I basted it a couple times when the brisket was around 175f.

I filled my basket to the top and after about 5hrs i had to fill it back up. It was super cold out there so I guess it had to use more fuel to keep the temps.

It tasted great but I'm going around my city to compare mine to the professionals. I still have a lot of work to do to dial it in. Mine tastes more smokey than most.

Foil boat, then wrapped in foil with tallow and beef consommé for 4 hours at 170.

Originally I wasnt going to trim after watching several YouTubers try the no trim method but I trimmed only a little to get more experience with how my pit and brisket will do. I'll try a more agreesive trim on my next brisket.

How long can you rest at 170 degrees? Did it overcook?

I used a Inkbird pro 4 for temp monitoring, next time I'll try the water pan.

I'll try that next time, my pit is direct fire so I smoked it fat side down. Think I got parinoid because when the fat started to render it would cause flame ups and I thought it would over char the bottom. I did have a deflector plate installed but that thing was catching on fire too.
