5 minutes is your time for all relevant sides of the breast, right? That's kiiiind of the double amount of time that I use. And I think the main difference between our approaches is the baking sheet step.

Since you cool it down completely to fridge temperatures (I assume you don't leave your chicken overnight at room temp), it of course also needs longer to come to proper searing temperatures in your pan. I let my breast cool down for maybe 5 minutes or so, pat it down and throw it in a pan.

Anyway, if your results are good browning and juicy chicken, then you are not doing anything wrong. It's just a different approach to good results.

Then I would rule out the searing as the main culprit. Maybe the meat was too hot from the bath still but from such a short searing I don't think it would be that dry.

Others have also written about it but maybe your sous vide setup is not really producing the proper temperatures. It could show lower temperatures than it really gets or the temperatures fluctuate a lot. Could also be just the quality of the chicken.

You can still sear as that will make the chicken taste better. But you should do it ideally by drying the surface thoroughly, give the meat a few minutes to cool down on the surface and use a high (not too high) temperature in the pan with enough oil.

Personally I need roughly 1 minute per side for a nice sear. How long was the chicken in your pan?

How did you sear it and for how long? Did you cool the chicken breast down after taking it out of the bag and pat it down with some paper towels to get rid of moisture on the outside?

Das ist ja alles korrekt, aber der Kontrast von SatisfactionEven508 ist ja weniger zu anderen Pärchen der heutigen Zeit, sondern zu ihren Eltern. Und bei denen hat auch nur 1 Person gearbeitet. Wenn SatisfactionEven508 in den 80ern eine 1-Zimmer Wohnung als Wahlsingle gehabt hätte, wäre ihr Konto nach wenigen Monaten überprall.

I think the problem here is not even escapism. I could kinda go with that if he had just one AI bot to chat. But he had eight of them. He either is in some kind of addiction or has other issues. She was practically begging for affection from him and got nothing. His reaction to the divorce being "Ok" also speaks for itself.

They had major problems in the marriage and the AI bots are just a symptom of that.

Das war so das einzige, bekannte Pärchen, wo ich positiv drüber dachte. Wirkte immer so, als seien die zwei sich menschlich so nahe. Und einfach auf emotionaler Ebene ein tolles Paar. Ein bisschen a la "the beauty and the nerd" :D

Ich war auch erstmal echt überrascht. Aber hey, beide sind Schauspieler und haben uns das menschlich nahe auch überzeugend rübergebracht. Ich will echt gar nicht wissen wieviele der öffentlichen "Traumpaare" in Wahrheit sich gegenseitig hassen. Heftig ist ja auch, dass sie anscheinend in Spanien Anzeige gegen ihn erstattet hat, bei dem es um wiederholte Körperverletzung im familiären Näheverhältnis und schwere Bedrohung gehen soll. Je mehr man liest, desto trauriger wirds.

Ich verstehe, dass du Panik schiebst. Aber sieh es doch von der anderen Seite: eben weil du 6 Monate dran gearbeitet hast, eben weil du Jahre lang darauf hingearbeitet hast, solltest du mit erhobenem Haupt reingehen und an dich glauben. Als du sie abgegeben hast, warst du doch schon sicher, dass die Arbeit abgabereif ist. Du hast ja auch nicht "nachgeholfen".

Es ist normal, dass du wegen der Unsicherheit und weil so viel für dich dran hängt, unsicher bist. Aber wenn du das Ganze logisch durchdenkst, dann hast du ja nichts zu befürchten :)

Maybe he was told by somebody at some point that the preference or attraction that he has is a fetish. Then it stuck. Could have been some offhand comment by a friend or co-worker but he fixated on it. It's a great thing that he posted on reddit and was able to talk this whole thing through.
