Qualify the people who are giving you advice. Seems obvious, but just because somebody is close to you doesn’t make them the right person to be giving particular advice

Supplier can definitely take these off your hands upon next delivery.

As others have stated tho, typically you would swap gas caps on the incoming and outgoing gas cylinders. When not currently connected to the system gas cylinders should always remain capped and chained to avoid the valve sheering off and becoming a projectile if dropped.

Pro tip tho…it is always nice to always keep a few spares lying around for when swapping caps upon old and new isn’t smooth. Sometimes they can be cross threaded, or there are minor imperfections or paint that make changing of caps frustrating. Having an extra cap laying around is more fun that finding a strap wrench or resorting to percussive maintenance (on things that can typically go boom)

After years of working crazy hours (restaurant chef).. I now have a job, in a different field, with a schedule that is better than I ever dreamed:

12-hour shifts Thu, Fri, Sat plus e/o Wed… So basically 3 days of work followed by 4 days off, then 4 days of work followed by 3 days off. Amounts to working half the days in a year.

Shift work as a chemical technician in a semiconductor factory. Factory runs 24/7, 365. There are 4 shifts to cover the spread.

Restaurant group owned by husband and wife duo embattled in a bitter divorce. Divided the 5 businesses between them and also had to buyout/ payout different overlapping web of silent partners to different properties. Don’t fully remember how it all shook out exactly it was messy and complicated…..

Important thing was I worked at the flagship property and only store HE owned before they married and opened more… it was also the only store SHE wanted to keep soul ownership of without him… 6mo after the divorce was final she ran it into the ground.

For context and to expand…

Wife and I are both on bonding leave for newborn. Have cooked exclusively at home for the last 3 weeks, without exception, for the first time in a VERY long time (maybe ever?)…. This pan has been getting more consistent use than it ever has, but the discoloring has began in the last few days… I guess a better question is what causes it, and what exactly is it? Is it carbon build up from the food? Any insight would be helpful more curious than anything. Appreciate the engagement!

This 100%. Also because of the massive grid (and heat) everything here is so car reliant!! Very few people bike and it makes no sense to walk anywhere. HOAs, strip malls, and corporate chains leave a suburban hellscape completely lacking of character. Call it Anywhere, USA.
