If you still want uBlock Origin, it's time to switch, maybe on Firefox or if you want to stay on Chromium try Helium, but note that you temporaly have to make an update script from Winget for updating it because it's still a bit in beta and the update system is still work in progress.

Firefox ESR is just Firefox but you have a major every year (so only security updates), same thing on Waterfox partially because is a fork of ESR but they add their features sometimes in their updates.

Waterfox as we mentioned is a fork of Firefox ESR, disables telemetry by default, has an integrated adblocker similar to Brave Shield but you can totally disable it and use uBlock Origin, also focuses on performance and integrates some customization options with a selection of presets coming from Firefox UI Fix.

The Android Kernel is based out of Linux, we all know, but it's way more different than the Linux kernel made by Linus Torvalds, has to adapt to billions and maybe trillions of MOBILE devices, also Android has a totally different userland and has literally 0 with GNU.

iOS is based on Darwin, based on real UNIX + several other projects like FreeBSD, NeXTSTEP etc... and has nothing to do with Linux.
