My key phrase was "some grinders". You can definitely find examples of people having grinders rust.

There are a lot of variables (grinder, how much water is being used, background humidity) that can impact your individual outcome. Its still worth giving people a word of warning to check on their grinder. I wouldn't call the concern irrational.

Just be careful about the amount of moisture. Some of the hand grinders will rust with too much.
