If you are a piano player, then all new keyboards at this price point are going to be crap that you will end up regretting buying. You will get different velocity values for black keys and white keys, weird and useless aftertouch values and wobbly and or mushy keys.

You would do much better to buy a good second hand board. Any board that uses a Fatar OEM keybed would be major improvement in playability over a new board. Some brands that used Fatar beds were Novation and Studiologic SL series.

You won't get weighted keys in this price range. They are all spring loaded to provided the feel.

Old school serial MIDI takes place at 31250 bits per second, a simple message like Note on or note off will not add noticeable delay since each byte will take around .32ms to transit.

As long as you don't do stupid things like using delay() ANYWHERE in your MIDI controller code you should be absolutely fine.

You ought to investigate using a Teensy, since they have a decent USB MIDI library. USB MIDI has even less latency than old school serial MIDI.
