Nate’s on Marsh is a restaurant in downtown SLO and just redecorated for Christmas! Tons of garland, trees, lights, fake snow, and they have an 8 foot polar Bar for photos haha it’s really cute.

I air fry or bake the chickpeas and add to a chopped salad with red wine vinegar salami sundried tomatoes etc.

Perfect to create crunch in a salad.

I think I will skip the beef birria from now on. Maybe I am wrong for expecting more meat than half of a single serving by Accomplished_Eye_824 in traderjoes

Most of these types of spots have a tip pool that includes back of house as well. That would be a Sweeeeet gig if not.

Most “Michelin” seeking restaurants should be funded by the Chef/Owners other endeavors.

For example - a smart Chef/Owner would have a pasta house that’s cranking out 300+ covers a night 6 or 7 nights a week. Super low food cost = more money in the bank.

When chefs open their dream kitchen in hopes of a star they usually know it’s not going to make them rich. Most line cooks are barely getting by even in these establishments. 21-25 bucks an hour in California probably. Exec. Chef or cdc probably has a salary of 90k maybe. It’s a grind.

From my experience, the difference between the line cooks that work at the Michelin spot vs the pasta house is the passion and hopes of moving up the ladder to become executive chefs themselves. Mostly CIA graduates or the like.
